A HIGH-END bar and restaurant is set to open at the former Ojo Rojo site in the town centre.
Bambuu is due to open its doors at the Triangle in early November, offering an upmarket space for dining, cocktails and events.
Luis Granell is taking over the site and plans to transform it into a unique venue, splitting the three floors into separate spaces.
He said : "The way we see it, there are three different sections to Bambuu."
The ground floor is currently being redesigned by Luis and the two other stakeholders involved in the business and will operate as a "bright and welcoming" Mediterranean tapas restaurant.
Luis said: "We drew inspiration from places like Ibiza and Mykonos - that kind of light, warm aesthetic with a touch of greenery.
"During the day it'll be focused on breakfast, brunch and lunch, before transforming into a bar in the evening with chilled house music and maybe a singer on a Friday night. It's designed to be a cosy, fresh and stylish space."
Upstairs, Luis plans to curate a fine dining, Asian fusion experience, which he described as a "more refined, intimate experience."
He added: "This space will be mainly for fine dining, ideal for date nights, small gatherings and exclusive dinners, with richer, deeper tones."
The garden at Bambuu is also set for a transformation, with Luis planning a seasonal event space.
Initially, it will host a festive Christmas market-style setup, before a full redesign begins in January to create a "Bambuu garden" with bold lighting and a "botanical vibe."
Luis believes the concept will fill a gap in Bournemouth's dining and social scene.

He said: "Bournemouth needs a more sophisticated dining experience as well as an elegant bar that people can enjoy.
"There's a lot of great venues, but I felt there was room for somewhere offering breakfast and brunch, a nice lunch spot, and an evening experience - all in one.
"We want to provide something upmarket but affordable, giving people a reason to come out for a meal or a drink without having to travel elsewhere."
Bambuu is expected to open early to mid-November at 106 Commercial Road.
