Cooking from Home: Potato soup II and peanut butter snack mix

It's never too early for kids to learn how to cook or bake, but the process can be tougher than anticipated. Following these top tips will ensure that cooking with your kids is safe, fun, and well worth the mess.

Potato Soup II

I have a cousin who is a retired firefighter. My sister says his potato soup recipe is the best ever and uses it as her go-to in cold weather.

2-3 slices bacon, cut in half3 medium potatoes, peeled and cubed2 stalks celery, chopped2 medium carrots, chopped1 small onion, chopped1 t. salt1/8 t. ground black pepper1 c. water2 T. flour2 c. milk

In a large saucepan, fry bacon until crisp; drain on paper towel.

To drippings, add potatoes, celery, carrots, onion, salt, pepper and water. Cook covered about 15 minutes or until vegetables are tender.

Combine flour with small amount of milk and mix to a smooth texture. Add to potato mixture along with remaining milk.

Cook over medium heat until mixture boils and starts to thicken. Garnish with crumbled bacon.

Peanut Butter Snack Mix

From the Super Bowl through March Madness, there are still a lot of big games to watch. If a crowd gathers at your house, try this peanut butter version that is different from salty or very sweet cereal snack mixtures.

You could substitute other unsweetened cereals for the Chex cereals.

3 T. honey2 T. butter3 T. creamy peanut butter4 c. Chex cereals (mixture of wheat and corn)2 c. mini pretzels1/3 c. dry-roasted peanuts

Preheat oven to 175°F. Line a rimmed baking sheet with foil and spray with pan spray.

Combine cereal, pretzels and peanuts in a large bowl. Combine honey, butter and peanut butter in a microwave safe bowl.

Microwave until soft and stir until smooth. Pour peanut butter mixture over cereal mixture and toss to coat.

Spread on baking sheet and bake for 90 minutes, stirring occasionally. Makes 6 cups.
